If you look at the body and neck connection point there is a difference, Usually. Set neck and Bolt on necks are roughly th e same construction type with a different fastening system. But you still need to make a pocket which is 3 sided. Now a neck thru system there is no pocket, the neck looks like it is a solid piece with the body. Since neck thru guitars glue wings on the neck and pickup body to give it its design. Set necks, even Gibson’s painted Les Paul’s, you will normally see the joint between the neck and the body.
To conclude:
Set necks you will see the pocket construction, Neck thru you will not have the underside of the pocket and you may see the wing joint.
